One of my absolute favorites from last summer is this amazing watermelon salsa!
It goes with every type of meat or as a topping on a green summer salad.

Every bite has a significant level of vitamin A, B6 and C.
On top of that it contains amino acids and lots of lycopene, which is a phytonutrient and plays a huge role in our cell health.

2 – 3 slice of watermelon cut in small squares
1/2 red onion diced
2 cloves of garlic, minced
1 huge bunch of fresh mint
1- 2 tbsp olive oil
Pepper to your taste

Mix everything and store it in the fridge over night
