1 big sweet potato shredded
2 eegs
1/2 an onion
1/2 cup of olive oil
1/2 cup of coconut flour
Salt an pepper to your taste

Preheat the oven to 450F
Mix everything and form palm size patties on a baking sheet.

Bake until golden brown, 15-20 minutes. Turn them half way if needed. You want them to be a little crisp.
